It's nearing the end of December. The snow has been falling and the temperatures have hovered below freezing for a few days.
Could there be anything edible left in the garden?
If you planted rutabaga there is! Cold hearty rutabaga actually tastes sweeter after a few frosts. It was a little tough getting it out of the frozen ground. We had to leave it in the sink for a few hours before the frost melted and the roots became warm enough to handle.
After trimming and washing, you can see, we had a pretty nice harvest.
Rutabaga can be a chore to peel and pare, as it is quite hard, but we have found an easy and quick way to prepare it.
First cut off the root end so it will sit flat in a bowl. Then cut off the top end, but don't throw it away. Using a few toothpicks, re-attach the top.
Set it in a bowl and microwave for 20 minutes.
Test with a fork to make sure it is soft, then remove the top and you can easily spoon out the flesh.
Add a pat of butter, some salt and pepper, and then mash. Homegrown, easy and delicious!
