I love my Weber Smokey Mountain... especially when it coms to smoking chicken wings. It's a very low maintenance process, and even most beginner smokers will find it less of a challenge than a traditional offset smoker... but it IS limited in it's capacity. I have 3 Weber Smokey Mountains, and my largest, the 57cm can "only" hold 80 wings at a time.
What started off as a small wing challenge between myself and my neighbour every Wednesday, quickly turned into a 1200 wings per week task for my Bistro in Hatfield... so I asked a mate of mine, Big George, to make me a another smoker... one which I could use specifically for smoking wings every week for my Bistros.
In addition to hosting a smoking competition in 2 weeks, George is currently up to his eyeballs in orders for smokers... but being the great mate that he is, he offered to make me a temporary solution: The Big George SmokeStack was borne.
It's sounds great in theory: 50% more space on my Smokey Mountain! SCORE! ... but even cooler that that is allows anyone to convert a standard 57cm Weber Grill into an "XL Smokey Mountain".
Check out this video where I'm introduced to it for the first time as well as a sneak peak at one other smokers he's busy building... In a later video I'll do a proper review of the SmokeStack... and if it turns out to be as great in practice as it is in theory, George will probably even start producing en masse for anyone else that would like to "give smoking a try"... #WatchThisSpace ;-)
