You might think since this is the third or fourth week that I have done this series, I might eventually run out of new stuff to eat. You would only be partially correct. Tonight is the first night that we will be having something that I have already shown in a previous post.
Another thing you might be thinking to yourself is "man, they eat a lot of chicken and vegetables in that house!" You would in fact be correct. In this post you might see several pictures of chicken and veggies on the grill, but I assure you, they ended up becoming two very different dishes.
Last week started off with these fantastic chicken enchiladas. The refried beans are homemade, we started doing batches of those in our InstantPot about a year ago. In my opinion they are some of the best refried beans I have ever had.
Pan fried zucchini is also a staple in our house and this night was no exception. I think I am going to try and plant some in our garden this year since we tend to eat it so much.
The next night consisted of grilled burgers, veggies (also on the grill), and box mac and cheese (because sometimes you just need to cheat a little). I over cooked my burger just a tad, but it was still flavorful and delicious. My wife had a chicken burger of course!
The next night we grilled out again as you see in the opening picture and we made this dish which is one of our absolute favorites. Grilled chicken and grilled peppers, onions, mushrooms, and asparagus are mixed together with a spicy yet healthy cream sauce to make Cajun chicken pasta. This is one fantastic dish!
The next night had us eating a small salad before diving into our entree of homemade chicken pesto pizza. We buy the pizza dough frozen from the store and then we add whatever we want to it. Sometimes it is a traditional pizza, others it is a bbq chicken pizza and still others it is this pesto version.
Towards the end of the week last week, the weather started to turn colder and we even saw some snow in the middle of May. That took grilling off the table so instead we had this dish. Chicken Cordon Blue casserole. It is basically cooked chicken along with ham, Swiss cheese, Stove Top Stuffing, and cream of mushroom soup all mixed together and baked to a golden brown. The brussels sprouts on the side accompanied it well.
Hearty breakfasts on the weekends are still the norm and this one of hard boiled eggs, sausage links and toast did not disappoint!
Two nights ago we had this plate of asparagus, refriend beans, and "king ranch casserole". I think it is a staple of the South (mostly Texas or Oklahoma, but @robertandrew can probably verify) and from what I understand pretty much every family has their own variation of the recipe. Ours was basically just corn tortillas, seasoned chicken chunks, cheese, a cream sauce, and finally the tomatoes on top.
This is a really filling dish that usually leaves plenty of leftovers for us.
Finally, that brings us to last night. Once again, chicken and veggies on the grill. This time we added it to some rice and came up with a very satisfying burrito bowl kind of like what you would find at Qdoba or Chipotle.
It was really @mrsbozz's last minute idea to add some queso to the dish that really made it sing. Talk about a great meal!
Last week I didn't have a new bottle of whiskey to share with you, but this week I do. I enjoyed the Michter's single barrel bourbon so much that I decided to give their Rye a try. Talk about smooth! This is quite possibly one of my most favorite bottles I have tried to date. I can confidently say a bottle of Michter's is probably going to be a staple in my cabinet from now on. I typically like my whiskey with a couple of ice cubes, but this one I could easily drink neat or with just a splash of water. If you get a chance, try it out!
