This was my favorite as a child growing up in my household. Sweet potato pudding was only made for special occasions, the holidays, a party etc. I used to watch my moms concoct this treat in the kitchen. At times i used to help her grater the sweet potatoes. The best part was licking the bowl after everything was poured into the baking pan.
It's been quite awhile since i had some. I'll really thinking of testing out my skills and trying to make this on my own. Or just take the easy way and find a Jamaican spot that sells it. Either way i need this in my life asap.
