Today i'd like to write about Bammy. What is Bammy? You might ask. Well Bammy is thick flat bread made out of freshly grated cassava and soaked in milk or coconut milk. You wring out the grated cassava in a cheesecloth to remove all liquids. You the fry it in a pan with some oil. Cassava (Yuca) is a root.
I'll add a recipe later. It's pretty much an healthy replacement for bread. Mainly served with breakfast it's widely loved in Jamaica. One of the main dish pairings is ackee and saltfish, but can be paired with pretty much anything.
Like mentioned above you can make it fresh by grating cassava, or buy it packaged from the store. Here in New York you can find it in most of the Korean fruits and vegetable markets. Or at a caribbean spot. Me personally i've never made it from scratch, i just buy it. Less work for me even though it doesn't seem that hard to make.
Here's a pic of a meal i made that was paired with some bammy. That's scrambled eggs, some left over fried chicken and pear (avocado). The bammy is underneath the chicken.

If you're familiar with this dish let me know your thoughts. Also i'm sure many other caribbean islands, or other cultures eat bammy or some form of it. They probably just have a different name for it.
