There is a text by the Mexican anthropologist Bonfil Batalla that I love to quote every time I have the opportunity to talk about the importance of corn for American cultures and for humanity itself:
Corn is a human plant, cultural in the deepest sense of the term, because it does not exist without the intelligent and opportune intervention of the hand, it is not capable of reproducing itself. That is why corn is transcendental in all native American cultures and is an essential part of the diet of all Americans today.
In my country, Venezuela. It is one of the most cultivated and consumed cereals in the form of the already world famous arepas that almost monopolize breakfast in these lands.
So corn is not lacking in the smallest conuco (orchard for family consumption) or in the large agro-industrial complexes where it is processed for the production of oils, precooked flour and animal feed, mainly.

El maíz es una planta humana, cultural en el sentido más profundo del término, porque no existe sin la intervención inteligente y oportuna de la mano, no es capaz de reproducirse por sí misma. Más que domesticada, la planta de maíz fue creada por el trabajo humano.

En mi país, Venezuela. es uno de los cereales más cultivado y consumido en forma de las ya mundialmente famosas arepas que casi monopolizan el desayuno en estas tierras.
Entonces el maíz no falta ni en el más reducido conuco (huerto de consumo familiar) ni en los grandes complejos agroindustriales dónde se procesa para la elaboración de aceites, harina precocida y alimentos para animales, principalmente.
