Mixed fried rice is my favorite dish. This dish has many different versions that are basically a mixture of rice with meat and some vegetables, there are thousands of different recipes for this dish. Here is the serving for 4 people:

1. Pickled vegetables is a traditional dish of Vietnamese people living in the North, which is a type of vegetable that is wilted and then preserved in an airtight container until fermented (until it has a sour taste and the vegetables turn yellow). This dish is similar to Korean Kimchi. This dish has a sour and salty taste and is often served with fatty meat, greasy dishes or used to cook soups and stir-fries. In this recipe I use them to stir-fry fried rice. Using leftover cold rice in the fridge to roast rice is the perfect choice. Whenever I have leftover rice, I usually put them in the fridge, after about 2-3 days I have a lot of leftover rice. My family doesn't keep animals so it would be a waste if I throw away the rice. I bought pickled vegetables at the market, you can wash the pickled vegetables or not, then cut the pickled vegetables into small pieces. Cut the tofu into small cubes about 1cm, then fry them in oil over high heat until the tofu turns golden crispy.
Dưa muối chua là món ăn truyền thống của người Việt Nam sống ở miền Bắc, là loại rau được làm héo sau đó bảo quản trong hộp kín cho đến khi lên men (đến khi có vị chua và rau chuyển sang màu vàng). Món ăn này tương tự như Kimchi của Hàn Quốc. Món ăn này có vị chua chua mặn mặn, thường được ăn kèm với thịt mỡ, các món nhiều dầu mỡ hoặc dùng để nấu canh, xào. Trong công thức này, mình sử dụng chúng để xào cơm chiên. Dùng cơm nguội còn thừa trong tủ lạnh để rang cơm là lựa chọn hoàn hảo. Mỗi khi có cơm thừa, mình thường cho vào tủ lạnh, sau khoảng 2-3 ngày là có rất nhiều cơm thừa. Gia đình mình không nuôi động vật nên sẽ rất lãng phí nếu mà mình vứt cơm thừa đi ấy. Mình hay mua dưa muối ở chợ, bạn có thể rửa dưa muối hoặc không, sau đó thái dưa muối chua thành từng miếng nhỏ. Cắt đậu hũ thành những miếng vuông nhỏ khoảng 1cm, sau đó chiên trong dầu với lửa lớn cho đến khi đậu hũ chuyển sang màu vàng giòn.

Ngâm mộc nhĩ và nấm hương trong nước nóng 15 phút, rửa sạch để ráo rồi dùng dao thái nhỏ. Tương tự, rửa sạch các nguyên liệu còn lại, mình mua bắp và đậu đông lạnh ở siêu thị, bạn chỉ cần luộc chín tới là được. Cắt xúc xích thành từng khối vuông nhỏ.

3. In a pan with cooking oil, you need to add dried onions and wait until the onions turn translucent, then add minced meat, saute minced meat with 1 tablespoon fish sauce, 1 teaspoon salt, 1 teaspoon pepper. Stir-fry until minced meat is cooked about 5 minutes, add ingredients such as: sausage, peas, sweet corn, tofu, wood ear mushrooms, shiitake mushrooms. Add cold rice, and stir well; actually only a little cold rice I ate, so this dish is less fatty than we think. In another pan, stir-fry the eggs until they are cooked through. Add eggs to the mixed rice pan, season with salt and soy sauce, continue to stir-fry for 5 minutes, then add green onions and then turn off the heat. Transfer rice to a plate, serve with cucumber and chili sauce.
Cho hành khô vào chảo, phi thơm hành khô, đợi khi hành chuyển màu trong mờ thì cho thịt băm vào, xào thịt băm với 1 muỗng canh nước mắm, 1 muỗng cà phê muối, 1 muỗng cà phê tiêu. Xào đến khi thịt băm chín khoảng 5 phút thì cho các nguyên liệu như: xúc xích, đậu Hà Lan, ngô ngọt, đậu phụ, mộc nhĩ, nấm hương vào. Thêm cơm nguội, và khuấy đều; thực ra mình chỉ ăn một ít cơm nguội nên món này ít béo hơn chúng ta nghĩ đấy. Trong một chảo khác, xào trứng cho đến khi trứng chín. Cho trứng vào chảo cơm đã trộn, nêm muối và xì dầu, tiếp tục xào khoảng 5 phút rồi cho hành lá vào đảo đều rồi tắt bếp. Chuyển cơm sang đĩa, ăn kèm với dưa chuột và tương ớt.
