It was last Monday when we commemorated our 125th Anniversary of Philippine Independence in school and there was a short program after the flag-raising. My colleagues planned to hang out outside after the program since we don't have class afterward. We decided to go somewhere else to eat our lunch. At first, we planned to go to this particular restaurant but we ended up going to the house of one of our colleagues just to minimize our expenses.
Before we headed up to her house we dropped by the market to buy corn, fish, the ingredients for our dessert mango tapioca, and all the necessary things needed. Honestly, this is my first time knowing this dessert, It may sound not good but it's true which is why I told them that I will make a blog about it. Because of my excitement, I forgot to ask for permission from my husband who works far away from us.
Our Lunch is Ready...
To cut the story short, everything is set for our lunch and it's time to eat. It was almost a quarter to 1 in the afternoon and all of us were very hungry so we eat first and then afterward prepared the dessert we have planned to eat then.
The Ingredients...
What we have is 1 kilo of ripe mangoes, 1/4 kilo of tapioca pearls, and 1 big condensed milk. But you can add more if you have many companions to eat or it depends on your taste buds. In our case, this is enough for us.
The first thing we do is cook the tapioca pearls. Since this is an outdoor activity we simply use this butane stove.
The second is, to stir the tapioca pearls until it will be fully cooked. This should be done for the tapioca pearls do not stick together.
The third is, to transfer the cooked tapioca pearls to another bowl and let it drain for a while.
Next, slice the ripe mangoes and put them where the tapioca pearls are placed.
Then, mixed them. Until the mangoes are equally distributed with the tapioca pearls.
And then, add the condensed milk to it while stirring it at the same time.
Finally, add the coconut water to it. We are lucky that our colleagues have like this at home so it's accessible to get it then.
Just to quench the thirst we felt at that time we added some ice cubes to it to make it cold.
Yay, it's ready! I am very excited to taste this kind of dessert. As I have mentioned this is my first time knowing about this. This is very simple to do and very yummy as well. It's not that costly too!
Without much a do, it's time to eat the mango tapioca. We love it and as well as the kids.
Hooray for today! Indeed, we had a sumptuous lunch and a great dessert. Our stomachs are full. Fewer expenses and it's all worth it.
