This morning I woke up hungry—not the usual type of hunger, when you have time to grab a cup of coffee...
... more like ASAP hungry!
Squeezed my coffee between making and having breakfast, it was prepared with a nice leftover oyster chunk from last night's dinner [in my plans that also supposed to be photographed, but hunger [like this morning] did not allow me to focus], and I stayed away from kitchen, waiting impatiently].
Along with to my nutritiously delicious shroomy breakfast, I took a chance and tried out [my already second recipe I found on Hive], every recommendation to try it out if you are gluten unfriendly!
I used red lentils instead of green. They have a similar taste and do not require overnight soaking [half an hour before preparing is fine].
I want it to be creamy, enough, and delicious... that shroomy part, but, I'm staying away from heavy sour cream in cooking.
Oyster mushrooms and carrot are sliced into strips and stirred in oil - it took me a while to decide whether to add onions or not, and even thinking about it was too much for early morning.
Strictly sticking to the basics...
Instead of heavy cream, a cup of yogurt and a spoon of mustard will go with the rest of the ingredients perfectly. And to thicken everything up nicely I added a bit of polenta and a pinch of rosemary at the very end.
Even tho recipe says tortillas, mine turns out more like pancakes maybe?

However indeed yummy enough to wrap the shroomies with both "hands", they had that nice crunchy moment coated with light mustard taste.
If these bites could talk....
Curios to know, do you mimic the flavor of a nice bite mumbling things like "mmmmm," "yum yum," etc?
