Asian cuisine is incredibly tasty and interesting. As a European, I really like this kind of food. An incredible combination of sauces, ingredients, spices - that's what I like the most. When you taste udon with eel and feel all the notes of each ingredient, and not all at once, then you enjoy the dish. Of course, in order to fully experience a dish, you need to be in the homeland of its creation, to understand why it has such a taste, what exactly is the combination of ingredients, the culture of consumption. That's when the dish will fully open.
