A few weeks ago, I made a homemade garlic sauce that turned out pretty well, but it still wasn’t quite what I expected—it was quite runny, and I was also missing another ingredient that gives these sauces an exceptional flavor, which in this case is cilantro. This time, the sauce turned out just right—perfect for pairing with any dish and much thicker than the last one I made. It’s a matter of practice, and since it’s something I don’t make very often, I lose my rhythm and the recipe a bit. I always follow the recipes from a woman on YouTube named “Temperos y Sabores”—she makes excellent food with exact measurements. However, this time I had to modify the recipe because I remember that the first time I made this sauce following her tutorial, it turned out way too intense—practically inedible—since she uses 6 cloves of garlic. In my case, I used half that amount (3) and kept the same quantities for the other ingredients to achieve a strong flavor that wasn’t overpowering.

Half a lemon
3 cloves of garlic

First, we need to make some homemade mayonnaise; the only difference is that we'll be adding garlic, so put two eggs in my blender, peel 3 heads of garlic, and add them to the blender.
We also add the teaspoon of salt and half a cup of oil, setting aside the other half for later.
I turned on the blender and let it blend until the mixture lightened in color and doubled in volume.
I couldn't take a picture of this part because I don't have three arms, but basically, with the blender still running, I started adding the rest of the oil alternately with the juice of half a lemon. Add both ingredients little by little until the mixture thickens, and keep tasting it to make sure you don't add too much lemon and end up with something too sour. Once I was happy with the flavor, I added a few sprigs of cilantro and blended them in.
And after adding the cilantro, I transferred the sauce to a container where I could see how much I had made—which, to me, is quite a lot. I took the opportunity to use it on some hamburgers I made today, and it turned out great.
