On a cold winter day with nothing to do, we decided we would try and can some dried beans.
Now my wife loves the ease of the canned beans so we decided it wouldn’t hurt to try. Yes they might not last as long as dried Beans but they are a lot less crunchy.
Plus it’s great for quick home cooked meals.
First we took a large pot not sure how big, guessing 10qt put about 17cups of dried Beans in and covered them with water. Now we wait, checking every 6-8 hours adding water as needed. We started them around 10am and canned them around 8pm the next day. This is not a fast process.
After the beans had absorbed all the water they could, we drained and rinsed them.
Now it is time to load up all the jars we had 15 in total.
Make sure you leave 1 inch of headspace in each jar.
Now place a teaspoon of salt in each jar, then top off with hot water, ensuring that 1 inch headspace again. They should look something like this.
Now off to the pressure canner these are processed at 10lbs or pressure for 90 minutes.
