quiero iniciar con uno de los alimentos pilares en el mundo de la gastronomía, y es el HUEVO, este humilde alimento es aveces dejado de lado por algunas culturas , es tan altamente versátil que incluso las recetas mas sencillas pueden llegar a ser verdaderos manjares de los dioses, ejemplo en mi país de residencia actual Venezuela hay un platillo tradicional y se llama "perico" que consiste en agregar lo que se te pueda ocurrir como pueden ser granos ya preparados o un picadillo de tomates, cebolla, cebollin, papas, queso entre otros (para hacer tortillas), pero la magia ocurre ya en la cacerola cuando agregamos al huevo como el ingrediente que unifica la receta... sencillamente es llegar a otro nivel en el sabor, textura e imagen que derrite al mas duro paladar.
También quiero comentarles sobre sus propiedades, ya que no solo es hablar de este humilde compañero de tantas recetas por su sabor, sabemos que este alimento es muy pero que muy rico en diferentes componente necesarios para nuestro sistema biológico.
El huevo contiene un nivel muy completo de proteínas ya que el solo aporta todos los aminoácidos esenciales que son los que el cuerpo no produce aportando 6gr de proteína lo que estaría aportando entre el 5 al 10% de las proteínas que un adulto promedio requiere diariamente, esto nos quiere decir que en un solo huevo se puede encontrar una excelente fuente de proteínas tanto así que es ubicado en la pirámide alimenticia en el miso rango que las carnes, las aves, entre otros.
Y la historia no concluye allí, también la clara del huevo que contiene unos 6.29gr de proteína y delos cuales 3.6 provienen de la clara del huevo, Además de las proteínas, encontramos otros nutrientes en la clara del huevo, como por ejemplo, riboflavina, niacina, ácido fólico, vitamina B12, calcio, hierro, cobre, zinc y sodio. De las 72 calorías que tiene el huevo, tan sólo 17 pertenecen a la clara.
