Hi Steemians!
Hope everybody is having a great weekend :)
My colleague (actually my Boss) brought me yesterday zucchini from her own garden
I was so glad having bio zucchini in my kitchen so I decided make a really delicious pasta dish and I want to share with you guys - yummy, delicious simple and healthy :)
Let's get started!
We're gonna need:
- 1 Big Zucchini
- 2 Red Bell Peppers
- 3 Tomatoes
- Some pasta (I used wholegrain)
- Salt & Pepper
- 1 Onion (I forgot to put on to picture)
- 1Tbsp (I also forget to put on picture, sorry)
Cook your pasta
Chopped everything up
Take your pan, put on a medium heat add 1 Tbsp of oil
Once oil is hot add your chopped onion on a pan
When onion gets translucent add zucchini and roast it for 5 minutes. At this time add some salt
Then add red bell pepper roast it for another 3 minutes
Then add 1 cup of water and steam it for 15-20 minutes until your zucchini will be soft
After nearly all water is gone add your tomatoes
Add some salt and pepper as you prefer and we are done :)
Serve with pasta and you can add some cheese on top
DIRECTIONS:
Enjoy and have a nice rest of the weekend :)
