Ingredients:
500 gm mutton
2 sliced thick onion
1 sliced tomato
1 inches cinnamon
5 green cardamom
1 handful chopped curry leaves
1/2 tablespoon coriander powder
1 teaspoon garam masala powder
2 pinches salt
1 dash powdered spice black pepper
3 cup Water
1 sliced & slit green chilli
1/2 teaspoon urad dal
4 clove
1 star anise
2 tablespoon Red chilli powder
1/2 teaspoon powdered cumin
1/2 teaspoon powdered turmeric
1 1/2 tablespoon sunflower oil

For Marination:
5 cloves peeled garlic
2 inches ginger
1 teaspoon fennel seeds
100 gm peeled shallots (small onions)
2 sliced & slit green chilli
1/2 cup Water

Step 1: Grind together the marinade ingredients until smooth. Add turmeric powder and mix well.

Step 2: Marinate the mutton pieces in this for 1 to 1 1/2 hours.

Step 3: Put a pan on medium flame and add water in it, bring it to a boil. Add the marinated mutton pieces and boil until half-cooked.

Step 4: Add red chilli powder, coriander powder, cumin powder, garam masala powder and salt.

Step 5: Cook till the mutton pieces are tender and water has almost evaporated. Keep aside.

Step 6: Heat oil in a different pan. Fry the dal until golden.

Step 7: Add cinnamon, cardamom, cloves and star anise. Fry for a minute or two.

Step 8: Add the onions and green chillies. Fry until onions are golden brown.

Step 9: Add the tomatoes and curry leaves. Cook for another 2 minutes and add the mutton pieces.

Step 10: Now add pepper powder and increase flame to high. Cook until oil starts to separate and the mixture becomes dry.

Step 11: Transfer it to a serving dish and serve hot with rice or roti.
