Today, July 24, the birth of the Liberator, Simón Bolívar, is celebrated. He was one of the most outstanding figures of the American emancipation against the Spanish Empire .
It is a non-working day at the national level, the vast majority take it as a free day to share with family, friends, go to the beach, rest, etc.

In my case, I decided to stay at home and prepare delicious yucca arepitas.

Today we Venezuelans manage to do many things, for example food. The economic situation is getting worse and it is getting harder for us to get everything we need.

Traditionally we are used to breakfast arepas, with egg, cheese, mortadella, ham, etc. But due to the high costs of the flour, it is impossible to buy it.

That is why I will show you how to prepare the cassava arepas, they are very easy to prepare and are ideal for when we want to eat something different and delicious, the most important thing is that we can replace the arepas with these yucca arepitas.

For the elaboration of the cassava arepas we need:

  • 2 tablespoons wheat flour
  • 2 cups grated yucca
  • 1 egg
  • 1 tablespoon of oil
  • Cheese
  • Salt
  • Yeast or baking powder

The procedure is the next:

  1. We grate the previously parboiled yucca.

  2. We add it in a mold together with all the ingredients.

  3. We knead until we unite everything.

  4. Place the arepitas in a previously greased tray.

  5. Bake for 20 minutes or until golden brown.
