Christmas Cooking - Turkey Roulade Recipe

One of my favorite Christmas dish is Turkey Roulade. I personally love turkey breast, it is easy to prepare and digest 😊.

Here is a very good recipe, really tasty and not so difficult to make. As the matter of fact, the hard part is to roll and tie the roulade. You need some skills there, or an extra pair of hands. Anyways... it doesn’t have to be perfect, it will cook, don’t worry...

This is how mine looked when sliced. Not perfect... but very yummy...

Ok, let’s start cooking! Butterfly your turkey breast and pat it dry. Sprinkle salt and pepper and set it aside. I like to keep the skin on, so it will hold the roll together, but that is optional.

Next steps: prepare the stuffing. You need dried cranberries and figs, some brandy, store-bought stuffing mix, 2 eggs, Italian sausage, fresh rosemary, chopped onion and celery, 1 cup chicken or turkey broth.

Start with the dried cranberry and chopped dried figs, add 1/2 cup water, 1 cup brandy. Simmer for a few minutes to reconstitute the fruit. Let it cool.

Chop one large onion and few celery stalks, sautée, add sausages and fruit mixture, add 1 cup broth, cook for 5 minutes. Let it cool.

I like some crunch, so I add some toasted nuts, that is optional, as some people are allergic to nuts. In this recipe I used shaved almonds. Beat the eggs and add them to the cooled mixture.

As the stuffing is ready, you spread it on the turkey breast, and roll it carefully. Tie your roulade and place it on a rack in a preheated oven (375 F). It will cook in 2 hours.

Don’t forget to baste your roulade with butter, so it will roast nicely. Here’s my roulade, it is ready. Now I have to let it sit for 30 minutes or so before I slice it. As you can see, there are a lot of ties there 😊 ... but I cut them off, so nobody saw them 😊
