Steak and Baked Potato Dinner Recipe

Last nights dinner was so delicious. I love steak and last night's steak was by far the best I've made so far. It was so delicious and the baked potato...mmmmm. I just had to share it with you. I haven't added it into my cooking blog so I don't have a link for a photo step by step, but I will-and when I do I'll update the post. Let me know if you tried it using my recipe.

Loaded Baked Potatoes
INGREDIENTS
4 large or 8 small russet potatoes
veg./olive oil for rubbing
1 tbsp oil for frying
salt
pepper
5 baby bella mushrooms
1 roma tomato
2 sprigs green onion
sour cream
1 tbsp butter
shredded smoky bacon cheddar cheese

DIRECTIONS
Preheat the oven to 375* (190 C)
Carefully wash the russet potatoes with a sponge.
Pierce the potatoes all over with a fork and rub them down with your preferred oil.
Season generously with salt and pepper.
Place the potatoes directly on the oven rack. (I lined the bottom rack with foil to collect any dripping)
Bake the potatoes for 1 hour. When done place in a warm place so they won't cool down too much.

meanwhile.....

Steak
INGREDIENTS
about 2lbs top sirloin petite steak
salt
pepper
Montreal Steak seasoning
2 tbsp butter
2 tbsp oil
3 cloves garlic

DIRECTIONS
Place the steaks on a cutting board and season both sides with the salt, pepper and steak seasoning to taste, pressing the seasoning into the meat well.
Cover the steaks with plastic wrap and set aside for about 50 minutes. (I waited until the potatoes were done)
After the time is up, place the steaks into a pan and bake at 425* (220 C) for 7 minutes.

meanwhile.....

Heat a skillet at medium high heat with the butter and oil.
Cut the mushrooms into thin slices and fry them in the skillet until golden brown. Set aside.
Dice the tomato and chop the green onions setting it all aside.

When the steaks have finished baking
Heat a skillet at medium high heat and melt w tbsp butter with a little oil.
But each garlic glove into about 4 pieces and place into the skillet.
Cut each steak in half (if desired)
Sear the steaks 1 minute on each side and about 30 seconds on the borders. (or until it has some nice color)
Place back in the pan and bake for 5 minutes.
Once done, let rest for 5 minutes before plating.

meanwhile.....

OPTIONAL: Cut a roma tomato into thin circles and an english cucumber into thin circles. Place on the plate alternating between the tomato and the cucumber. Sprinkle with a little salt.

Place a baked potato on the plate and cut it in half but not all the way.
Carefully split it. Using a fork, gently fluff the potato.
Top with the fried mushrooms and then the shredded cheese.
Add about 1 tbsp sour cream and top with the chopped tomato and green onions.

Place a piece or two of the steak next to that and enjoy with a good glass of wine.
