Mediterranean Quinoa

This dish comes together in mere minutes, and we all know how great quinoa based dishes can be for people who follow a vegetarian diet. But if you don't know quinoa is one of the few plant foods that provides all nine essential amino acids, it is packed with protein, vitamins, fiber, and antioxidants.

So give this healthy, flavorful dish a try if you are looking for something satisfying for your body and your tastebuds.

Ingredients:

  • 3 cups prepared sprouted quinoa
  • 1 large tomato, chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon dried oregano
  • 1 tablespoon fresh basil, chopped
  • 2 tablespoons crumbled feta
  • 1 tablespoon balsamic reduction
  1. Heat olive oil in large skillet over medium heat. Add prepared quinoa, garlic salt, and oregano and toast for about 2 minutes, stirring occasionally.
  2. Remove from heat, add tomato, basil, and feta and stir to combine. Drizzle with balsamic reduction and serve warm.

This is great topped with pan fried tofu or served with spanakopita on the side. Or for an extra boost of iron and vitamins, serve this on a bed of fresh spinach.
