Vicky's Crepes

Recipe Servings: 4

Ingredients

half cup soy milk
half cup water
quarter cup melted soy margarine
one tablespoon turbinado sugar
two tablespoons maple syrup
one cup unbleached all-purpose flour
quarter teaspoon salt

PROCEDURE

Preparation Time: 20 minutes
Cooking Period: 120 minutes
Ready In: 2 Hours and 25 minutes

In a large sized blending bowl, mix soy milk, water, quarter cup margarine, sugar, syrup, flour, and salt. Wrap and chill the mixture for two hours.

Lightly grease a five to six inch pan with some soy margarine. Heaten up the pan till warm. Fill approximately three tablespoons batter into the pan. Swirl to make the batter cover the skillet's bottom. Cook till golden, fold and cook on opposite side.
