Ingredients:

  • 4 bananas
  • 75 gram rice flour
  • 1 tablespoon tapioca flour
  • ¼ teaspoon salt
  • 125 ml water
  • oil for deep frying

Instructions:

  1. Combine rice flour, tapioca flour, salt, and water in a mixing bowl.
  2. Peel bananas and cut each into two. Make three slices along its length,  but keep the bottom 1 inch intact, so it can be opened up like a fan.
  3. Heat enough oil in a pot for deep frying.
  4. Dip the bananas into the batter and fry until golden brown and crispy,  about 3-4 minutes. Remove and drain on paper towel or wire rack. Serve  immediately.
