iPhoneography ~ Moringa

Horseradish Tree Flowers

Horseradish Tree leaves (Malunggay in Filipino), scientifically named
Moringa oleifera Lam.
is one of my favorite veggies.

I love it cooked in coconut milk with dried anchovies or boneless smoked fish.

Just boil coconut milk with a bit of salt, crushed garlic and dried anchovies or boneless smoked fish. Add moringa leaves (can include young fruits and flowers) and coconut cream with thinly sliced onions. Voila! A delicious "Ginataang Malunggay" ready for serving!

This veggie is very delicious even without fish.

I love it in sour soups or noodle soups too!

Just boil water with a bit of salt and sliced onions, add moringa and tamarind powder. That's my sour soup. LOL! Serve with rice and fried fish. Yum!
