The Cheese Stacker - One of my best creations

I call this The Cheese Stacker, from when I still had my small pizzeria.

I found that the best way to make burgers was to use 90% lean ground rounds, freshly ground pepper(freshly grinding makes a huge difference) and a ton pureed white onion plus some other seasoning. Then it is preshaped flat, and chilled low right before cooking. Maybe I'll share the exact recipe here someday.
