It's almost that SPOOK~Y time of the year again, folks!
Ingredients
for the cake:
- 1 cup white whole wheat flour;
- 1/2 cup neutral cooking oil;
- 1 tsp baking soda;
- 1/2 tsp baking powder;
- 1 tsp pumpkin pie spice or more to taste;
- 2 large eggs;
- a pinch of salt;
- 1 cup light brown sugar;
- 1 cup pumpkin puree;
- chopped walnuts (optional);
- chocolate bits (optional);
- 1 tsp vanilla extract.
Directions:
Combine flour, baking soda, baking powder, salt, spices and set aside. Instead of traditional pumpkin spice mix I use a blend called Winter Baking from Whole Foods, it has just a slightly different ingredient list, I love it, there's no need to seek it out, but if you happen to stumble upon a bottle, you might wanna grab one!
In a separate bowl whisk the eggs, add in oil, pumpkin puree, vanilla and sugar. Mix wet and dry ingredients, throw in some walnuts and chocolate bits, or fillings of your choice.
Preheat your oven to 350F, pour the mixture into your 6 cups bundt pan and bake for approximately 45-50 minutes or until tester comes out clean. Keep an eye on the cake, making sure it doesn't burn.
When I used a 10 inch round pan to make this recipe, it only took me around 30 minutes for the cake to fully bake, it takes a bit longer in a bundt pan, or it did for me 🤪Let the cake cool down, top it with your favorite frosting or caramel sauce and enjoy!
Keep refrigerated.
