Apple and Plum Mousse

This year has been exceptionally abundant in plums and apples. We gladly nibbled them fresh and gave some away to our friends. We had a plum sauce with a dinner nearly every day and cooked some other tasty meals with them. The fruits, in addition to tasting delicious, also look really photogenic.

Apple and Plum Mousse

Ingredients

  • cooking apples
  • plums
  • cinnamon powder
  • fresh ginger
  • honey
  • juice of one lemon

Method

Choose a large pan and add just enough water to cover the bottom. Take one apple or plum at a time, dice them finely and put into the pot, stir and add lemon juice. Proceed with the next fruit. Make sure you stir the fruits frequently and cover the pot between adding new fruits. Doing so and adding some lemon juice should stop apples from browning. Process all of your fruits following the same steps. After adding last of your apples and plums you can season the mousse with cinnamon, ginger and honey. After adding spices and last fruits cook the mouse for another 5-10 minutes. Once the mouse is ready, spoon it into sterilised jars.

This mousse tastes delicious. It can be eaten on its own, served as a side dish or added to pies and pastries. I left mine lumpy because I prefer the texture.
