Pani Puri - Golgapa Recipe with Teekha Pani, Sweet Chutney and Stuffing


Complete recipe for the perfect Indian street food Pani Puri, Golgappa, Puchka, Fulki, Pani ke battase :P

[INGREDIENTS]

To make Puri:

  • 1 Cup Sooji/Rava/Semolina
  • 2 Tbsp maida/plain flour
  • 1 Tsp salt
  • 1/4 cup + 1 tbsp regular water (not hot)

To make Teekha/ Spicy Pani:

  • 5 Cup water
  • 3 Tbsp Pani puri masala
  • 10-12 Ice cubes
  • 1 Tsp hing
  • 1 Tsp salt
  • 1 Tsp black salt
  • 1 Cup pudina/mint leaves
  • 1/2 Cup dhaniya/coriander leaves
  • 2 Green chillies
  • 1 Inch ginger
  • 1 Medium lemon

To make Imli/ Tamarind Chutney:

  • 100 gm Imli/ Tamarind
  • 3 Cup water
  • 1 Tsp sauth (dried ginger) powder
  • 1 Cup gudh/ jagarry
  • 1 Tsp red chilli powder
  • 1 Tsp jeera (cumin) powder
  • 3/4 Tsp salt

For Stuffing:

  • 1/2 Cup boiled dried peas
  • 1/2 Cup boiled dried chana
  • 1/2 Cup boiled dried moong
  • 1-2 Medium boiled potato
  • 1-2 Medium chopped onions
