Crusted Pork Loin
Ingredients
5 pork loin ribs
Salt and pepper
Whole-grain mustard
Almond glaze:
1 cup butter
1 bundle of parsley
3 cloves garlic
3/4 cup almonds
4 cups breadcrumbs
Salt and pepper
Olive oil
Potatoes:
4 potatoes, thinly sliced
3/4 cup butter, sliced into thin pats
Salt and pepper
Rosemary
Nutmeg, grated
2 cups Parmesan cheese
Instructions
- Preheat oven to 400 degrees. Line a baking sheet with foil.
- Place pork loin on baking sheet. Sprinkle with salt and pepper, then lather with mustard. Place in oven for 40 minutes.
- Prepare almond glaze: In a food processor, add butter, parsley, garlic, almonds, breadcrumbs, salt and pepper. Drizzle with olive oil, and blend until this forms a paste. Place in refrigerator until needed.
- Remove pork loin from oven and top with dollops of the almond glaze. Return to oven for an additional 10 minutes.
- Place sliced potatoes vertically in a greased baking dish. Place pats of butter between potatoes, and sprinkle with salt, pepper, rosemary and nutmeg. Top with Parmesan, and bake for 20 minutes.
- Slice pork loin, and serve alongside potatoes.
