What To Do With That Left Over Rice? How about this Rice Pattie & Veggie's in a Coconut Milk Sauce!

The day before, you've done a master piece of a meal for the family but its now the day after and you have all this left over rice!

I'll be honest, most times I just give it to my dog Kratos but I had a moment and thought...lets get all iron chef here lol

And voila! This rice patty sprung to mind

This is a great semi vegetarian left over transformation for those who like myself want to eat better and cook more however if you lovvve your meat feel free to add in your meat of choice, bacon or chicken would be also amazing in this dish its totally up to you!

So here is what you need:

Pattie

-Left over rice (in this case I used brown rice)
-diced onion
-diced garlic
-grated cheese (chedder or parmesan)
-1 egg
-1/4 cup of gluten free flour
-salt & pepper to taste

Coconut Milk Sauce

  • Veggies of your choice
    -salt & pepper to taste
    -thyme (not too much, this flavour goes a long way)
    -coconut milk

Instructions

-For the pattie, add all the ingredients in a bowl and mix them with a spoon or your hands. Cover with a plastic wrap and set aside in the fridge for about 30 mins. Once done, form the mixture into a pattie or ball and fry them in some coconut oil until brown and crispy

-For the sauce, sautee the veggies until tender, add your salt, pepper, thyme. Then add in your coconut milk and let this simmer until slightly thick.

Because i am Caribbean I threw in here a chicken bouillon cube (my Caribbean people know what I mean here lol) and some hot sauce but you can leave this as is if you like!

And just like that you have an easy to make, healthy lunch from left overs. Another plus side is that you got two meals out of 1 pot! I am all about saving that money honey!
