One fish sometimes got a fish from a fishing lover.
It is fresh and appreciated, but big fish are hard to handle.
It is serious if you get a salmon too.

鮭も1本もらうと大変です…
Since cod is not eaten raw (a treasure house of Anisakis) I often make tanpoles.
鱈は生では食べられないので(アニサキスの宝庫)私はよく昆布を巻いて昆布〆にします。
まず身だけ切り分けます。
切り身の水気をタオルなどで拭き取り昆布を下面並べて身を乗せます。
もう片面も昆布を当てます。
ラップでびっちり空気を抜かすくらいに巻きます。

冷蔵庫で丸一日から2日寝かせます。
すると昆布の旨みが魚に移って風味が増しますし、昆布の味がします。
それを天ぷらにして、ウニ塩で頂くとまるで料亭気分!
ウニ塩も毎年ウニを50個くらいパカって、身を取り出し、濾して薄焼きにしてふるいに何回もかけて丸2日くらいかけて作った塩で、食べたらウニ!ってくらい美味しいし、おにぎりにして食べてもホント美味しいです。
今年作ったら記事にしますね。
北海道はいくらも手作りします。
それぞれ家庭の味があって、筋子を買ってバラしてそれぞれの出汁につけて出来上がりです。
市販品を買った事がないです。
それもまたお伝えできたらと思います。
