Why not jump right in?? My introduction post.

Hey there! My name is Jenn. While I’m excited to be a part of this community, I’m super nervous as well. You see I’m a researcher by nature and often find myself needing to read everything..twice er..maybe even three times, before taking action. Guess what happens? Yep, I never take action. Quite frankly, I was super overwhelmed by everything I should be doing to get started here; I thought I would do things differently this time. For the moment, I stopped reading and decided to jump right in. After all, my plan for 2018 is going to be a year of challenging myself! I came across this community online, as my curiosity of cryptocurrency got the better of me. Very much still learning about crypto and I'm confident this is a great place to learn.

I love quotes, cooking and baking; travel, spending time with my husband and driving my two kids around to their never ending activities. I don’t just do any cooking and baking but low carb, gluten free, sugar free and pretty much taste free (just kidding)! My interest in this lifestyle started for two reasons. The first, when my daughter was born she basically had developed many allergies, had delayed speech, trouble reading and as she aged, really struggled in school. After being at our wits end and having tried everything, including meds that I will never put her on again, this was the last resort. Of course at this time recipes where not readily available or even close to what they are now. I needed to figure out how to make things appealing to a child. This way of living has changed my daughter's life and I’m excited to share it with others.

Meet my amazing family. They are my IT. I can’t imagine trying to make sense of this world without my husband, Brad, joining me in this crazy adventure of life.

The second reason was my health. You see, my dad died of a massive heart attack when he was 52. It was that moment that made me realize that if I wanted to be around for my kids, I need to make some serious lifestyle changes. I have PCOS and was also diagnosed with type 2 diabetes. The standard of care was not working and I was miserable. I needed to change the way I was approaching my illness and I found low carb/ keto. Through many years of trials and errors, ups and downs, I have found what works for me. I have successfully put my diabetes in remission and my PCOS symptoms are much improved. My heart goes out to anyone that suffers from any of these health problems. I hope that my posts here will help give you the inspiration and courage you need to find the answers you deserve.

I love this picture of my mom and dad. It’s one of the few I have of him.

For the past few years I have really dug into living this lifestyle. The positive health changes that have come with it are huge. But it hasn’t all been lollipops and unicorns. I hope that through sharing my struggles, it can show people they aren’t alone. Sometimes we just need someone to believe a little more in us then we believe in ourselves. I was lucky enough to have a huge support system that believed in me and with their help, I have come a long way.

I’m excited to share with you tasty recipes that go along with this lifestyle. I love trying new ones and sharing others recipes that passed the family taste test.

While my main focus of this blog is food and sharing recipes, I hope to also share about our family travel adventures, and will probably geek out on you in regards to science and research based on ketosis, ketones and supplements.

Thank you for taking the time to read my introduction. I look forward to getting to know more people in this community and learning new things as well.
