Preparing for tomorrow's Farmer's Market
As promised, here are the recipes for yummy organic hummus and gingerbread that I made for tomorrow's market
Hummus:
I found this recipe on Yummly.com
It turned out good but next time I make it, I will use a bit less lemon juice and more hot sauce.
I actually doubled the recipe and ended up with 6 1/2 containers.
It's called "The Best Hummus"
Ingredients
2 garlic cloves,minced
2 cups canned chickpeas, drained, liquid reserved
1 1/2 teaspoons kosher salt
1/3 cup tahini
2 tablespoons freshly squeezed lemon juice
2 tablespoons reserved chickpea liquid or water
6 dashes hot sauce
3 ice cubes
2 tablespoons olive oil (optional)
Paprika garnish
Instructions
Add all ingredients from garlic to hot sauce in a food processor or high-powered blender
Process until very smooth, about 3 minutes
Add ice cubes and process until Incorporated
Transfer to serving bowl and drizzle with olive oil (if using) sprinkle with paprika on top
The next recipe is my version of "Dadows" Gingerbread
This recipe I found in an older cookbook called "Sugar and Spice" by Sally Gordon. I multiplied the ingredients times 4 and ended up with 9 small loafs. Here is the original recipe, however I used half the substituted sorghum molasses with brown sugar and honey.
Ingredients
1/2 cup sugar
1/2 cup sogham mollasses
1 egg
1 large cup flour with 1 teaspoon soda
1 teaspoon ginger
1 teaspoon cinnamon
1/4 teaspoon salt
Directions
Combine all ingredients and mix throughly. Add 3/4 cups boiling water. Pour into greased 8x6 - inch pan. bake at 350 for 30 minutes.
This recipe is over 109 years old. Nancy was Sally's great-grandfather, an Oklahoma Pioneer woman.
