CHEESY Polenta & Actifit August 6 2023



If you read this post, can you please let me know if you are on your mobile or on a PC/Laptop and which front-end are you using? I'm testing something and would like to find out if my text and image formatting works on all platforms or not.


If I were to show you just the first photo here, would you have guessed what's in that pot? You could have easily guessed the yellow ingredient as corn or polenta, but what about the rest, butter? If you would have said butter, the answer would have been wrong, but not really that far off, as butter is made from sour cream, and both are concentrated fat resulting from milk, which is the base ingredient here (together with corn flour), just in different states and shapes :).

In fact, people making this recipe at home do/can use some butter, but it's not included in the original recipe.

The recipe in its most basic and simple form includes coarse yellow corn flour, the main 2 types of sheep's cheese (the yellowish one in the photo has a high fat content and the other one has a very low content of fat in it, which most people everywhere know as "ricotta cheese"), and some whey and/or milk instead of water.

Some pre-cooked meat can be added in the mix or as a side dish. To give this dish a special smoky taste, cooking over an open fire is preferred. :)))

By the way, the next photo is for those that don't know it yet, this is where some of your milk and cheese comes from. Someone or something has to do it, in this case, it's bio/eco as it is done naturally and manually by people. But in most farms nowadays, this process is done by milking machines (try doing that every morning and evening on top of a mountain, and without any electricity nearby).

The view in the next photo is complementary but not mandatory, the recipe will turn out just fine even without it. The name of the dish is the word in the title, BALMOS. There is no word in english for it, but a common translation would be "polenta with melted cheese" or simply put, "cheesy cheese".
