Today I am making a vegetarian recipe with various winter vegetables. Vegetarian food made with different vegetables is very tasty and nutritious
Among the winter vegetables I have taken are sweet pumpkin, broad beans, brinjal, chichinga, beans, onions, leaves, tomatoes.
We all know the nutritional value of sweet pumpkin. Sweet pumpkin contains vitamin A. This vitamin is very useful for the human body
Beans contain many natural nutrients that are very beneficial for our body
Eggplant contains vitamin A. Eggplant also contains a large amount of vitamin E and K. This vitamin prevents blood clotting in the body
Chichinga is a very nutritious whole vegetable which is beneficial for diabetics due to its low calorie content
Onion leaves contain many nutrients, one of the important vitamins being vitamin A. Onion leaves also contain many natural nutrients
Tomatoes also contain many nutrients. All the vegetables we have made vegetarian today have natural nutritional value so we all need to eat vegetables every day.
We cannot eat so many vitamins together in the same day if we make vegetarian food with all kinds of vegetables, but we get the vitamins of all vegetables together and they are very beneficial for our body, so today we have made vegetarian recipe with all kinds of vegetables.

garlic paste | One and a half spoons |

Soybean | oil 3 tbsp |
step 1:
First, I will wash all kinds of vegetables and cut them into medium size and wash them separately in a tray. When the vegetables are washed, I will put three spoons of soybean oil in a pan.
step 2:
When the oil is hot in the pan, this time I add dry chillies and a teaspoon of black cumin seeds and fry them on medium flame. When the black cumin seeds and dry chillies are fried, I add garlic paste and fry them on medium flame till the garlic paste turns brown.
step 3:
When the garlic batter turns brown in color, I add all the vegetables one by one, leaving only the onion leaves and tomato slices and add them after the vegetables are lightly cooked.
step 4:
When all the vegetables are boned, I will mix the vegetables with the masala with the help of a spoon with salt to taste and the powder of all the spices. I will fry the masala with the vegetables for five minutes. Now add enough water to boil the vegetables
step 5:
I cooked the vegetables with enough water for about seven minutes on medium heat. After the vegetables were lightly cooked, I added onion leaves and tomato slices and cooked them on high heat for about two minutes to dry the broth.
step 6:
When the vegetarian vegetables are cooked and the broth becomes dry, I sprinkle green chillies and coriander leaves and stir the coriander leaves with the vegetables and turn off the stove.
