Have a great day, to all my dear friends👩🍳. How are you? Despite today being a little rainy, all the work was completed successfully. Additionally, the upcoming days will mark a festive season for Sri Lankans. Food and sweets are specially prepared for this occasion. One indispensable sweet for this festive season is called kokis. Traditionally, it is made using rice flour, but I opted to use wheat flour for my preparation. It is a delightful sweet loved by guests who visit our home. Let's take a look at the ingredients needed to easily prepare this type of sweet. 🌼🌼
Materials Used.
Wheat flour 250g.
2 1/2 cups of coconut milk.
Salt to taste
2 teaspoon of Sugar.
1/2 Teaspoon of turmeric powder.
Coconut oil for frying.
Two drops of food coloring.
A template needed to prepare the kokis.
The cooking process as follows.
Let's fix this now. First take a bowl and add some wheat flour to it. Add sugar and salt powder to it. Mix it well.
Now add coconut milk little by little and mix.
You need to adjust the batter so that it is not too thick. Put the prepared batter in two separate bowls.
Now put the yolk powder and food coloring separately in the two prepared batter bowls and mix.
Now take a vessel and put it on the stove and add coconut oil to it. After the coconut oil is heated, dip the kokis mold in the oil.
Now place the heated kokis mold on the batter, soak it and place it again on the oil as shown in the images below.
After that fry it until golden With these two colors you can get this way.
This crispy snack is incredibly tasty, especially for the New Year's dinner table, where it becomes an indispensable sweet treat. Sri Lankans enjoy it during tea time or as a side dish with rice, and it's commonly served on special occasions. Many people prefer this snack because it's low in sugar, and if stored properly, it can last for almost two weeks. With that, I'll bid farewell for today until we meet again. Have a wonderful day.
