The strawberry season has kicked off with a bang! There seems to be a glut of gorgeous plump and juicy red heart-shaped Strawberries, with big price drops in every store.
They are simply irresistible, and I've been nibbling on Strawberries till it's coming out my ears; way better than candy, I would say!
I wanted to make a dessert but did not feel like going to the store again, and thought, what about Strawberry Muffins? I could make a batch, store them in the refrigerator, and have one, or two, with my morning coffee.
I know breakfast is the most important meal of the day, but, I'm not a morning person, and food is the last thing on my mind, but I'll never say no to a muffin.
That strong cup of coffee I enjoy first thing in the morning does nothing to get this night owl going, or perhaps only kicks in hours later!
I enjoy Blueberry Muffins but have not seen Strawberry Muffins anywhere, and I thought oats would make a good addition to a breakfast muffin. I add it to bread, apple crumble, and bran muffins, so why not to these?
Before we get to baking, I must share some fun facts I discovered about Strawberries a while back. They belong to the same family as a Rose, yep, surprised me as well, they aren't true berries! They're unlike all other fruits as their seeds are on the outside rather than the inside! Strawberries also come in different colours, not just red. Another surprise is that they contain more Vitamin C than Oranges!

Chia Seeds soaked in water is a good egg replacement
Strawberries to the stage
Make your own liners:
Cut baking paper into 15cm squares, fold around the base of a suitably sized glass
Time to bake
Dust with Icing Sugar if you wish
