Compote of parchitat:
The compote texture that we know is given by the protein, which offers us the hull of the parchita. It is a skin without odor or taste so you can use it to make any flavor of compote. The only thing you will change is the juice. The rest you will have the same procedure
Ingredients

Preparation
Wash the patches well and proceed to remove the pulp. Wash the inside well so that no rest of the pulp remains.
Then put it to boil with water, until they crystallize.
Remove it from the heat and remove the yellow shell.
Then in the blender, put the shells and the juice of your favorite fruit with a little sweetener or sugar, blend for 1 min or 2 min. You don't need a lot of blending time.
Proceed to pack in a glass jar and reserve in the fridge. You will see that it is acquiring more body.

Cornstarch
Sugar
Preparation
Make a concentrated parchita juice.
Proceed to strain to remove the seeds
Then put the juice in a pot over medium heat.
Add a tablespoon of cornstarch
Add sugar and start mixing with a wooden spoon
You will notice that a kind of caramel forms, stop mixing and lower the heat.
Wait for it to reduce by half and remove from the heat.
Enjoy it as a dip or topping
