Hello Community and all food lovers greetings, Hope you all are ready to eat some real spicy food. This recipe I am making for @qurator top hive chef theme spicy. Here I make a classic dish from Maharashtra- Misal-Pav. This typical Maharashtrian dish is famous for its different pungent tastes from different spices and is very popular in Mumbai. there are different ways of making it in different places. here is how we made it in our family.

pav is bread in marathi but for those who need to avoid gluten it is still possible to enjoy Misal with rice instead of bread.
Ingredients
2 cups of sprouted beans mung beans and moth beans.
2 tbsp sesame oil
1 tbsp ginger-garlic paste
2 tomatoes
1 lime 1/2 lime for juice and 1/2 lime for slices
2 white onions 2 red onions
1/2 branch of cilantro
Spices: 2 tsp Kashmiri chili powder
1 tsp coriander powder
1/2 tsp cumin powder
1 tsp very hot chili blend
1 tsp turmeric
2 tsp garam masala
1 tbsp salt
1/2 tbsp homemade hot chili paste
How to sprout beans
Washed both beans and mixed them together.
Soaked them overnight.
The next day drained the water.
And kept soaked beans in the strainer covered with cheesecloth.
in 24 hours they are ready to use.
Heated 2 tbsp sesame oil in a pressure cooker. Added chopped onion.
Stirred until golden color.
Stirred all spices in onion.
Added chopped tomatoes when all spices started aromatic.
Added salt
Stirred all spices with tomatoes continuously to avoid burning.
Added sprouted beans to the cooker.
After the beans got coated with spices
Adding ginger-garlic paste
Homemade chili paste
and squeezed lime into the mixture.
Stirred well and added 2 cups of boiling water.
covered cooker and cooked until the second blast
While that was cooking I made a paste from onion and coconut, In an iron skillet using a few drops of oil fried desiccated coconut, and dried onion. then sing a mixer ground it into a fine paste.
After 2 blasts waited for the cooker to cool down.
the beans were nicely cooked.
Added coconut and onion paste, chopped cilantro, and 1 cup more water. then I separated some of the liquid from the Misal.
shifting Misal from the cooker to a pan to easily stir.
Separated the extra spicy liquid and cooked 2-3 minutes.
The thicker Misal is cooked about for 3-4 minutes
Making Pav Indian soft bread rolls
Ingredients:
2 cups white flour
1 tbsp sugar
1 tsp salt
1/2 tsp dried yeast
3 tbsp sunflower seed oil
250 ml water.
1 cup whole wheat flour.
1 tsp mixed 50/50 white and black sesame seeds.
Blending all ingredients and gradually adding water made dough. Added oil and gradually mixed in the whole wheat flour.
Kneading for around 5 minutes and kept for rising.
After 2 hours dough had rose enough for use.
Punched and more kneading 10 minutes rest.
then made small balls and set them on the baking tray. Brushed water on them and sprinkled with the sesame seeds. let them rise for around 1/2 hour.
In the preheated oven baked them for around 20 minutes at 180 C. The pav is ready.
Everything we need for making Missal-Pav
Serving preparation.
In the bowl first pour 2 ladles of thick mixture.
Then 1 ladle of thin sauce.
then finely chopped onion
Some Indian-style spicy fried noodles (made with chickpea flour salt and chili turmeric)
then chopped cilantro
and a few drops of lime juice.
Served and enjoyed. It is not as complicated as it looks it is full of proteins and good nutrients. We make it when getting guests, family gatherings, or on special occasions.it is more fun when many people enjoy it.
