Hello, community greetings. No need to buy special ingredients. Whatever you have you use for this recipe some things are not available use some other substitute that is available in your place area, or home. Different lentils different vegetables, and alternative choices of spices. sharing with you how I manage to use up available ingredients. for making a 100% vegan dinner. A full meal.

Ingredients:
2 cabbage leaves
3 small carrots
2 potatoes
1 tomato
15 green beans
2 cm ginger
1 green paprika
3 sprigs of coriander
1 cup rice
1/2 cup brown lentils
1 onion
1/2 cup frozen sweet pea pods from the garden.
small piece of cucumber and 1 cherry tomato for garnish

1.5 tbsp oil
1 tsp chili powder
1/2 tsp turmeric
1 tsp salt
1 tsp garam masala
1/2 tsp biryani masala.
2 bay leaves
grated ginger

Wash rice and lentils and soak them meanwhile.
Chop all vegetables

Warm oil in a pan.
Add 2 bay leaves.
ginger onion and potatoes.
Stir them for 2 minutes.

Add beans, carrots, paprika, cabbage, tomato,
Stir all vegetables for 2 minutes.
Add spices.
Now stir it well so all vegetables are mixed with spices.

Now drain the rice and add it in.
Same with the brown lentils.
Keep the heat on medium.
Stir well for around 2 minutes, being careful not to burn it.

Pour in enough boiling water to cover all vegetables, rice and lentils.

sprinkle with some chopped coriander.

At the end add the sweetpeas pods on top. Cover the pan and cook for around 6-7 minutes on low heat.

Here is the dinner without hassle. Serve how you desire.
