Most people believe that cooking requires a lot of utensils and equipment. However, I believe that this is not an absolute truth. To be honest, I am one of those who believes that cooking is done with creativity and good ingredients. In this post I want to prove it to you!

I never imagined that it would be possible to make a cake using only a simple pan and a cooktop. But, yes, this cake is super practical, easy to make, and does not contain any animal ingredients! Some little tricks are necessary, it is true... But don't worry! It is a very simple recipe and very easy to make. This delicious cake is ideal to eat with a good afternoon tea. Check it out!

Ingredients

To make this delicious vegan banana and blueberry cake you will need

1 tablespoon of flaxseed flour
1 tablespoon warm water
4 tablespoons of oat flour
1 tablespoon coconut sugar
1 tablespoon baking powder
1 mashed banana
½ cup vegetable milk
Blueberries (as many as you like!)

How to make

First mix 1 tablespoon of flaxseed meal with 1 tablespoon of warm water. The flaxseed is responsible for binding the dough, playing the same role as the egg.

Then mix the other dry ingredients, i.e. the oat flour, sugar, and baking powder. Mash the banana and add vegetable milk little by little.

You will notice that 1 tablespoon of baking powder seems like a lot of baking powder for this amount of dough. However, as vegan cakes are a little "heavier" than gluten cakes. Also, this cake has bananas in the batter, so it needs a good amount of baking powder to be fluffy.

Well, after mixing all the "wet" ingredients it was time to include the blueberries. I simply love blueberries! So, I add a lot of them!

After incorporating all the ingredients, grease the pan with coconut oil and pour the batter in. Turn on the stove and cover the pan so that the batter can bake. After 10 minutes, turn the dough over on the other side.

It takes about 20 minutes to be ready (but this can vary, depending on your type of cooktop) and it is delicious!
