this dish is a perfect accompaniment to any Indian meal.I learned how to make this recipe from my mother. She used to cook very delicious food. I really miss her. With simple ingredients and easy-to-follow steps, you'll have a delicious dish ready in no time.
Ingredients:
250g cluster beans (guar phali)
2 medium-sized tomatoes.
10-12 garlic cloves, minced
1 teaspoon cumin seeds (jeera)
1/2 teaspoon turmeric powder (haldi)
1/2 teaspoon red chili powder
2 green chilies, finely chopped
Salt to taste
Cooking Oil

๐ Trim the ends of the cluster beans and remove any strings. Cut them into bite-sized pieces.
๐Bring a pot of water to a boil and add the cluster beans. Let them boil for about 5 minutes.
๐Drain the beans and rinse them with cold water. Set them aside in a, sieve to drain completely.

๐Bring another pot of water to a boil. Score the bottoms of the tomatoes with a cross-cut.
๐ Place the tomatoes in the boiling water for about 1 minute.
๐Remove them and transfer to a bowl of cold water. Peel off the skins and finely chop the tomatoes.

๐ Heat oil in a kadhai or frying pan over medium heat. Add minced garlic and sautรฉ until golden brown. Add the blanched cluster beans and fry them until they are slightly crispy. Remove and set aside.
๐ In the same pan, add a bit more oil if needed. Add cumin seeds and let them splutter. Add garlic minced, .turmeric powder, red chili powder, and chopped green chilies. Sautรฉ for a few seconds.Add the chopped tomatoes and cook until they are soft and mushy, stirring occasionally.
๐ Once the tomatoes are cooked, add the fried cluster beans and mix well.
๐ Season with salt to taste and cook for another 3-4 minutes on low heat, allowing the flavors to blend.
๐ Once the cluster beans are tender and coated with the tomato mixture, turn off the heat.

๐Transfer the stir-fry to a serving dish and garnish with fresh coriander leaves.
