Baked Pumpkin With Stir-fried Watercress For Dinner

With our favorite vegetables, dinner can be more meaningful.

Dinner can indeed be a fun time. Especially because dinner can be used as a medium to gather with family. Dinner can also feel intimate with couples.

Tired after work, all day to work outside and at dinner we can gather again. I like dinners filled with random chats.

So, what's for dinner today? This morning I went to the market and saw pumpkin slices. I bought the pumpkin slices for less than $1 which I could make two servings. Quite economical.

Since shopping this morning, I've been thinking about dinner. That's why I also bought watercress and also tempeh for protein.

So, for dinner this time I combined pumpkin, watercress, and also tempeh. If I usually make baked whole pumpkin, then this time I will make a different variation. I made it like pumpkin fries.

It's just that, the pumpkin fries this time are not crispy. So instead of calling them pumpkin fries, I prefer to call them just baked pumpkin.

I always like baked or roasted pumpkin variations. It's because of the combination of juicy, sweet, and tender, as well as the distinctive smell that is delicious after the pumpkin goes through the baking or roasting process.

Sweet or savory, I always favor pumpkin. Moreover, pumpkin is always available in Indonesia, regardless of the season. And the important thing is the cheap price of pumpkin.




THE INGREDIENTS

  • 500 grams of pumpkin
  • 200 grams of watercress
  • 150 grams of tempeh
  • 5 cloves of shallots, sliced
  • 3 cloves of garlic, sliced ​​
  • 1/2 tsp of salt
  • 1/2 tsp of coriander powder

to season pumpkin

  • 1 tbsp of vegetable oil
  • 1/2 tsp of salt
  • 1/2 tsp of coriander powder



COOKING INSTRUCTIONS

Heat the air-fryer or oven. Peel pumpkin, and cut the pumpkin into pieces. Don't throw away the pumpkin seeds, because here I will bake them too.

Prepare the seasoning to bake the pumpkin. Mix oil with salt and coriander powder. Then, add pumpkin pieces and pumpkin seeds. Mix well until they combine with the seasoning.

Transfer to a baking tray. Here, I use two baking processes for all pumpkin pieces.

Bake pumpkin pieces for 20 minutes on each side. Don't forget to flip them so they cook evenly.

Prepare the watercress, tempeh, and also shallots and garlic. Cut them into smaller pieces. For the tempeh, I cut the tempeh into cubes.

Heat some oil, then add the sliced ​​garlic and shallots. Also, add herbs according to your taste. Here, I use bay leaves. Saute until they become fragrant. Once fragrant, add salt, and coriander powder.

Then add the watercress and tempeh. You can add a little water, up to 1/2 cup of water to make it easier for them to cook and also to prevent the bottom of the dish from burning. Cook them for about 5 minutes.

Serve the stir-fried watercress with the baked pumpkin. Sprinkle with sesame seeds or almond flakes. Also, I add hot me and my husband's favorite hot sauce.
