Baked Potato With Broccoli Fritters

Potatoes are always a delicious choice for snacks, and we can combine them with broccoli by baking them to reduce oil intake.

Living in Indonesia, always being familiar with fried foods with lots of oil. Especially fritters. Not only fried with lots of oil, but also with added gluten flour. That will add to the guilt when eating them.

That's why, I like to find alternatives for snacks that contain less oil, and are also gluten free. If I make them at home. So, like this time, I have a stock of potatoes and want to make snacks.

Thankfully, I have an air-fryer that allows me to make fried food but not fried. An air-fryer also allows me to make snacks with less oil to get crispier food results.

In addition to potatoes, I also have a stock of broccoli. I was thinking about fritters that combine both ingredients. Incidentally, I also have a stock of cornstarch. So, it will be a great option for today. Let's make baked potatoes with broccoli fritters.


THE INGREDIENTS

  • 500 grams of potatoes
  • 1 head of broccoli about 200 grams

  • up to 50 grams of cornstarch flour
  • 2 cloves of garlic, grated
  • 1/2 tsp of salt
  • 1/2 tsp of pepper powder
  • 1/2 tsp of coriander powder
  • spray oil to spray the fritters when baking time

COOKING INS TRUCTIONS

Peel the potatoes until clean, while heating the water until it boils.

Boil the potatoes for about 15 minutes until tender but don't let them fall apart. Then, remove and drain.

Once the boiled potatoes are warm, grate them or you can just use potato masher tools. Use a large container so that you don't have to move them again when mixing them with the broccoli.

Move on to the broccoli, chop the broccoli with a blender or with a blender.

Add chopped broccoli to grated/mashed potatoes. Also, add grated garlic, salt, coriander powder, and pepper. You can also add chopped celery if you want it. Mix well using a spoon.

Add corn starch flour little by little so that the dough is not too hard.

Knead the dough until they can be formed into balls. I use up to 50 grams of cornstarch.

Don't forget to heat the air-fryer or oven. Then, shape the dough into balls. Indeed, their texture is not so hard, also sticky because they contain cornstarch flour. You can use plastic gloves to shape these fritters. Also, spray them with a little oil to form a crispy layer on the outside.

Bake the fritters for 20-25 minutes on each side. Don't forget to flip them.

Serve the vegan fritters with your favorite sauces. As always, I use spicy sauces.

Even though they're air-fried, they're still crispy on the outside and soft on the inside. Serve them warm for maximum crispy results. I love it!
