SPANISH PAELLA VALENCIANA

I've always loved learning about different cultures, especially the food. My love for food is at a higher level. But I learned about the Spanish Paella Valenciana and I decided to try.

There has been a lot of debate about the authenticity of Paella and where it originated from. But it originated in Valencia before it became a household Spanish dish.

The major ingredient used for Spanish Paella is Saffron. Your Paella is not complete without whips of Saffron. But let's get to the recipe, should you decide to try it at home.

Recipe:

  • 2 cloves of garlic (chopped)

  • 1 small red pepper or a tablespoon of ground pepper

  • 1 medium onion bulb (chopped)

  • Two large tomatoes (chopped or grated)

  • Medium saffron strands

  • Olive oil

  • 100g Chorizo

  • Some pieces of Rabbit meat or chicken breasts

  • 200g Spanish rice

  • Green peas

Procedure: (After you season and boil your chicken pieces and get the stock)

  • Pour the saffron strands into the stock and stir for a few seconds.
  • Put it aside and place your frying pan on your cooker. Use a large one. Pour a little olive oil into it and slide in the chorizo. Cook for 3 minutes and remove it, leaving the oil in the frying pan.
  • Carefully put your chicken breast into the hot oil and stir. Fry for 7 minutes, till the chicken is cooked all the way.
  • Take it out, leaving the oil in the frying pan. Add a little extra oil and pour in the chopped onions and garlic. Fry for about 5 minutes.
  • Add your pepper and stir for 2 minutes.
  • With high heat, pour on your rice in bits and stir generally.
  • Add the saffron stock and 1¼ cup of boiling water. Stir thoroughly.
  • Add your cooked chicken pieces and add the chopped tomatoes. Cook for eight minutes. Stir at least once to avoid burning your food.
  • Add your green peas and fried chorizo to the mixture and leave it to cook for 7 minutes. Make sure the water has been absorbed.
  • Turn off the heat and allow it to cool for 7 minutes. After cooling, stir it again to distribute the flavor.

You can serve it with an extra sprinkle of oil.
