Sunday Morning Treat- luchi and Aloor dam!

Hellooo hiveans...Hope all are good and healthy.

Today I came up with a new recipe of Kolkata, West Bengal .It is very popular in kolkata. LUCHI & ALOOR DAM.
This is used to made in every speacial occasions and festive season's. As we all know that West Bengal has its own culture and heritage. Luchi and aloor dam is one of the best food of Kolkata.
Luchi means- fried poori and aloor dam means spicy tangy potato curry. Potato is only vegetables which we can play around with different types of spices...

Lets start to make Luchi and aloor dam-

**Ingredients **

All purpose flour-2 cup
Salt-to taste.
Oil/butter-for frying.
Nigella seeds-½tspn
Water-½cup


For aloor dam-

Potatoes-½kg
Tomatoes- 3
Ginger piece-½ inch
Green Chillies-2 optional
Red Chilli Powder- ½tbspn
Panch Phoron spice-1tspn(fennel seeds,fenugreek seeds, nigella seeds, cumin seeds and black mustard seeds)
Asafoetida-½tspn
Bay Leaves-1
Coriander Powder- 1 tspn
Cumin Powder-½ tbspn
Turmeric Powder-½tspn


METHOD

1.In a platter add all purpose flour, salt, nigella seeds and butter or oil.

Mix all well with hands and knead a soft dough. Cover and keep aside.

2.now for aloor dam boil potato with salt.

3.peel it and sprinkle some salt, redchili chili powder and turmeric powder.

4.now heat mustard oil in a pan.

5.with the help of fork poke all the potatoes

6.now fry all the potatoes till golden brown in colour.

7.transfer them in a bowl and keep aside.

8.now in a pan roast some fennel seeds , cumin seeds, coriànder seeds, clove, cardamon , cinamon sticks and dried red chilli. Roast All the spices well

9.Then transfer all the spices to grind it in a powder.

10.Then in the same kadhai/ pan heat mustard oil.
Add panch phoran , bay leaf and green chilies.

11.Then add chopped onions. Stir it for 2 mins

12.Add turmeric powder, redchili powder Coriander powder and salt.

13.Mix it and then add grated ginger.

14.Add chopped tomatoes and grated garlic.

Mix it well

Then add the spice mixture which we made.

Then add water.

Now add fried potatoes and stir it.

Let it simmer for 10 mins in low flame .

At last add coriander leaves 🍃 and lemon juice .
Off the flame and keep aside.

For Luchi.

Heat oil in a pan for frying.

Divide the dough in equal size and make small balls.

Flatten it and roll it in small circle shape .

Now fry them in hot oil till golden spots appear.

Its ready to serve hot.

Transfer the luchi in plate with aloor dam
And serve it hot!
