South Indian is not only my favourite food now, but also Raag’s. So I try new south Indian recipes now. Tomato Upma is a new addition to my list. It is a healthy breakfast variety prepared with sooji (rava) and tomato as main ingredients. It is a quick and a simple breakfast dish that you can make without any preparations. You can add a variety of vegetables as per your choice to make it more nutritious for your breakfast time. I made the recipe simpler but when I actually cooked it, I loaded it with veggies to make it really nutritious and filling for my baby.

Method
Step 1: Heat 1 tsp ghee in a pan, add rava and roast on medium heat until fragrant. Transfer it to the plate.
Step 2: To the same pan, add another TBSP of ghee, add mustard seeds, cumin seeds, chana dal, urad dal, and peanuts. Roast dal till it's slightly golden brown.
Step 3: Now add chopped onion to the pan and cook till onion become light brown. Further, add chopped ginger, chopped green chili, and curry leaves. Saute on low flame for 1 minute.
Step 4: Now add turmeric powder and red chili powder. Mix well.
Step 5: Add chopped tomatoes and then add salt. Cook till the tomatoes are completely mashy.
Step 6: Now add 3 cups of water. Once the water starts to boil, add the roasted rava. Mix well and cover the pan. Cook for 5 minutes.
Step 7: Switch off the flame. Garnish with coriander leaves and cashew.
Your tomato upma is ready now. Serve it with coconut chutney.
