Baingan Masala Recipe!

Baingan Masala might sound like a boring recipe by name, but guys, you will love it when you try this recipe. This is a simple recipe but it tastes heavenly. I make baingan masala almost every week. For me, its my guilt free food since its tasty and healthy at the same time.

Ingredients:

• 250gms Baingan (Brinjal)
• 200 gms Potato
• ½ TBSP Red Chilli Powder
• ½ TBSP Turmeric Powder
• Dhaniya Powder
• Garam Masala
• Salt as per taste
• Amchoor
• 1 Sliced Onion
• 2 Chopped tomato
• Oil for cooking

Step 1: Wash the baingan and potato well. Peel the potato and cut into small pieces. Cut the baingan also into pieces, not too small and not too large.

Step 2: Now cut the onion into slices, chop the tomatoes into small pieces.

Step 3: Take oil in a pan and heat it. Now add the sliced onion and let them turn brown.Once they are brown, add tomatoes and let it cook for 5 minutes.

Step 4: Add all the spices. Mix well and let it cook. Now add the baingan and potatoes and mix it well with the onion tomato mixture. Cover the vessel and let it cook on medium flame. Keep mixing.

Step 5: Once the Potatoesandbaingan are properly cooked, empty the pan in a bowl. Garnish with coriander leaves and serve hot with chapatis/paranthas.
