Let's get acquainted with a delicious Iranian dish for vegetarians.

Hello. Tonight I want to introduce you to another delicious dish.

Most Iranians love eggplant and they love the dishes prepared with eggplant.

We use eggplant in various stews and pickles.

Tonight, I have prepared a simple and easy stew for you, which is also suitable for friends who are vegetarians, because I have not used meat in this dish.

Ingredients needed to prepare this stew:

  • Eggplant
  • potato
  • tomato
  • tomato paste
  • Oil


First, peel the eggplants and if you like, you can fry them and cut them into smaller pieces like I did.

In order to use less oil while frying, we pour a little water into the oil, then fry the eggplants in it. During frying, it is much better if we put the lid on the dish and let it fry slowly with low heat. Eggplants are cooked.

I fried the eggplants in a pot so that the oil does not spread around.

In the dish where we want to prepare the stew, pour a spoonful of tomato paste along with 1 spoonful of oil and fry it a little.

Add turmeric and salt.

Pour a glass of water on the paste and put the fried eggplants in the pot.

We slice three potatoes and put them on the eggplants (this dish does not have potatoes, but I have a special interest in potatoes in this stew, that's why I add them), we also put the tomato slices on the potatoes. We sprinkle a little salt and put it in the container.

After about half an hour, our food is ready.

You can eat eggplant stew with bread and rice.

Some people use pieces of chicken or mutton in the stew, but today I wanted to cook this dish without the bones.
