I have come with another Iranian dish.
A delicious aash for those who do not eat fatty foods and like light food.
This aash is one of the traditional dishes of Iran.
When I was a child, my mother used to make this aash and we would eat it.
In Iran, you can see all kinds of soups and stews. Each city and province has its own special soups and stews that are cooked on different days such as the holy month of Ramadan.
The ingredients I used for this soup:
- Rice (I had dried rice left over from the previous meal in the freezer, I used the same for this soup)
- green beans
- potato
- Vegetables (leek, parsley, cilantro, fennel)
- dry mint
- Oil
- Turmeric
- Salt
To start, I cut some green beans into pieces about the size of a finger and put them on the stove with rice and water.
I washed the potatoes with clean skin and cut them into four parts.
Because the rice I used was already cooked, this dish was ready quickly.
We put all the ingredients together in the jam first.
After we are satisfied that the potatoes are cooked, we add the finely chopped vegetables to the soup.
In another small container, we pour a little oil, when it gets a little hot, we add a little turmeric and a few spoons of dry mint.
And we stir quickly and turn off the stove because dry mint burns quickly.
Now pour one or two spoons of hot mint on the aash and stir.
The aroma that rises from the food is crazy.
Our food is ready after 5 minutes.
So easily!
You can eat this aash with yogurt, by pouring two ladles of aash in the desired bowl, adding two spoons of yogurt and a spoonful of hot mint, and then stir and eat.
