CHEATS INDIAN CHICKEN for those last minute lazy dinner nights šŸ“

I get lazy at the end of the day when I know I should be thinking about dinner for our family. I enjoy baking but I donā€™t really enjoy cooking so I have a few decent default recipes that I can throw together in about 30 minutes and everyone has a tasty home cooked meal.

This CHEATS INDIAN CHICKEN is one of those default family favourites. My mom made it years ago and now even my kids know how to throw it together.

I call it CHEAT because itā€™s in no way near to the authentic Indian curries, but one of the key ingredients is called Indian Style Tomatoes. They happen to include all the yummy goodness of Indian cuisine in a can so get to take advantage of this little can of amazingness! It even has bay leaves!!!

So hereā€™s how easy it is to make CHEATS INDIAN CHICKEN

INGREDIENTS

1 ready roasted store bought chicken(told you I was lazy)
1 can Indian Style Tomato & Onion (let me know if you have other variations in your part of the world)
1 can Chopped Tomato and onion mix
Ā½ bottle fruity chutney (about a cup)
Rice (I used Basmati, but whatever you fancy will work)

Vegetable side of your choice - today I made steamed pumpkin with course salt because the sweet flavours of the pumpkin compliment the sweet curry beautifully.

  • Debone the cooked chicken and keep all the meat aside.

  • Heat the Indian Tomatoes and tomato and Onion mix and chutney in a large pot. Bring it to the boil and then allow to simmer for about 10 minutes. Stirring occasionally.

  • Cook your rice at the same time - I love doing my rice in a microwaveable rice cooker. Itā€™s 20 minutes every time and turns out perfect. 1 part rice to 2 parts water is a winner.

  • Once the tomato mixture has blended and cooked down a little bit add the cooked chicken pieces into the large pot and stir.

Allow to cook for another 10 minutes.

  • This time I steamed the pre-cut pumpkin in the bag in the microwave straight after the rice. So easy.

This might have taken 30 minutes but it is delicious and stress free cooking for midweek nights. Itā€™s also super easy to double it up when you have guests that will rave about how tasty your cooking is šŸ˜‰.

We will often add a salad and tasty vegetable flat breads to the table for guests to graze on with their meal.
