Hola, comunidad de Hive. He venido con este Post de receta de masa para pasta casera, la cuál es muy sencilla de hacer. Esta receta es para los que no tienen miedo de ensuciarse de harina y disfrutar de sus bondades, lo cual es un privilegio porque este producto es muy versátil.
¿Quien no ha querido hacer su propia pasta para sorprender a sus familiares y amigos?. ¿Quien no ha tenido la curiosidad de saber cómo hacer una masa para pasta de manera muy sencilla?, bueno aquí estoy para brindarle mi receta, dónde puedes hacer varios tipos como la pasta para lasaña o como le decimos en mi país "pasticho", se puede hacer fetuccinis, Tagliatelle, farfalle, pappardelle, raviolis, cappelletti, que en un próximo post les enseñaré hacerlas rellenas y diferentes recetas.
Estas pastas las puedes usar al momento o secarlas y usar para otra ocasión. Al hacerla fresca se cocina muy rápido, que es lo bueno, no dura mucho tiempo en cocción.
Ahora bien, vamos con los ingredientes los cuales son muy pocos y sencillos.
Ingredientes:
- 4 huevos
- 400 gr de harina de trigo ( puede ser cualquier harina)
(por cada 100gr de harina, se usa 1 huevo)
Nota: Si la masa está muy seca y no se une, fácilmente agregas un huevo más, esto sucede porque los huevos son pequeños.
Procedimiento:
Lavar bien los huevos con agua y jabón para quitarle cualquier impureza. Seguido de esto romper los huevos uno a uno; mi consejo es primero hacerlo en un envase aparte para cerciorarse que estén en buen estado, luego de saber que estan bien, pasarlo a otro bowl para unirlos todos.
Luego en el mesón o un bowl, agregar la harina de trigo y formar una especie de volcán, adicionar los huevos e ir mezclando de adentro hacia afuera hasta formar una masa.
Amasar por 5 a 10 minutos hasta obtener una masa compacta y homogénea (si la masa aún está muy húmeda, adicionar harina de a poco).
Para este procedimiento en particular use una máquina para hacer pasta, lo cual se consigue en cualquier tienda de productos para el hogar o bodegones a un precio accesible. Si no tiene máquina de hacer pasta, no se preocupe, fácilmente puede usar un rodillo de madera, mármol o metal.
Con la máquina para hacer pasta, pasamos la masa de 8 a 12 veces por el rodillo plano en el nivel más grueso para darle los toques finales a la masa y que salga lisa, cada vez que pase la masa por los rodillos espolvorear la masa con harina de trigo para que no se pegue.
Seguido de esto dividimos la masa en 3 partes para trabajar cómodo. Tomamos una parte de la masa y la pasamos por el rodillo liso para ir adelgazando la masa, yo la pasé primero por el nivel 5 y luego por el nivel 6 o aplanarla hasta tener 1 milímetro grosor y así podemos trabajar las láminas de pasta.
Con la lámina plana se puede hacer Lasaña, y diferentes pastas rellenas. Al tener las láminas procedemos a pasarla por los otros rodillos cortadores para obtener las diferentes formas de pasta larga.
Recalcando una vez más que si no tiene máquina de hacer pasta, fácilmente puede usar un rodillo manual de panadería y estirar la masa hasta obtener una lámina fina, después la dobla varias veces y con un cuchillo cortar tiras de 0,5 cm de grosor y así obtenemos los Tagliatelle.
También hice un tipo de pasta que se llama "Farfalle" que tienen forma de lazos; tomé la lámina y corte tiras largas, luego la dividí en tiras más pequeñas de 2,5 cm y uní el centro para formar los lazos. Con un cortador ondulado le di forma a los bordes pero también puede dejarlos rectos. Aquí algunas fotos del procedimiento:
Al cortar las láminas y convertirlas en pasta, las puede poner a secar en una bandeja o guindarlas en un lugar seco y con ventilación.
La cocción son de 5 a 7 minutos con el agua hirviendo.
